Avatar settings are all handled in your User Control Panel, it tells you what the deminsions, and file size need to be. Quotes are done by clicking the "Quote" Button in the post that you want to quote. For polls click the little check box next to the poll option in the start a new thread screen, after you type your message in the thread body. After you've done that, click submit button and it will take you to the screen to add your poll questions.

When typing any message where you want to hide part of it for whatever reason, highlight the text or links, then click the 'spoiler tags' button (second to last just above the text field, and to the immediate left of the 'YouTube tags' button). Your message will then look like this.

Quotes are done by clicking the "Quote" Button in the post that you want to quote.
