I'm with Spitfire (on "movie 2" Shredder), even if looking back, that old costume is a little on the sparkly side.
Mirage Shredder, particularly in the old days, looked kind of awkward and scrawny, as if he wore his blades to make up for his physical inferiority. Of course, we know he's a beast, but the way he was drawn at first certainly made it seem that way to me.
I notice that OP's Shredder pics all feature some cool pose, except for 2k3 Shredder, who sadly has a concept/reference picture amidst all the other, dynamic pieces of art.

Close call betwen 1987 and Mirage, but I'll pick with Mirage since his design close to the 1987 but actually is as dangerous and villainous as his style is shown.

The IDW Shredder is my current favorite in terms of looks. Really I like them all but the Nickelodeon Animated version. That one is the least appealing of all except for maybe this guy... http://i45.tinypic.com/2mmg19d.jpg

Just going off of looks alone, I've got to tip my hat to IDW's design for Shredder. There's just something more realistic about the design (be awful hard for a ninja to move speedily if they're just COVERED in armor), and the red on black looks badass.

I like 87 Shredder and all but mirage Shredder is way better IMO. Like someone said earlier he is that his design is more simple and effective. I also think he's more intimidating that way.

I went with the original, but all of them are almost equally great, which I'm glad to say of the Nick Shredder too. He already looks like a good reason to watch the new series.

Shredder has a lot of great incarnations. I have a hard time picking from mirage shredder, live action TMNT (1990) shredder and IDW shredder, personally. OT shredder looks quite good but he's such a goofy, inept villain I have a hard time taking him seriously:)
I can't rank Nick shredder until i've seen him in action a little. His appearance is a tad over the top (but not as bad as 2003 shredder, thankfully... or worse, supershredder). I would prefer a Shredder with more subdued blades and armor. He is a martial artist first and foremost -- the blades add some extra deadliness. They are secondary to his ability, they should not be so dominating on his appearance.
I'm glad IDW went with a more realistic look and didn't put him in full-plated metal samurai armor or something.

Movie 2 Shredder is my favorite. His helmet is bad ass.
Agreed. Saki in purple, it really fits him. And that's not counting the "Saki is feminine in Japanese" meme. Could we count the old Konami games as a bonus choice, because that would be my top choice -- 1987 design, but 2nd movie colors?
Of the actual options listed: Mirage, 2nd Movie, 1987 design in that order. I don't dislike the other choices, either, as I like each of them for different reasons. It's a hard one for me, I must say.
Edit: If asked, the Nicktoon one is the only one I'm not crazy about. It looks awesome, but it seems like the designers were trying too hard and I worry if it will animate well. However, that's only my current option, as I would like to be convinced otherwise.

I'm in full agreement on this. :D
I voted for the 1987 shredder outfit. To me it is the best looking Shredder attire. Though mirage would be a close second.
I never cared for the 2k3 version.

While Im in all honesty just happy for a new TMNT, I cant say I like the nick incarnation's oversized, block armour...but hey.

The original Mirage Shredder remains the best for me, especially in the issue in which he resurrects and beats the **** out of Leonardo, to then throw an amazing shape inside April's shop.
1987 Toon Shredder was way too clumsy and inoffensive. The 2003 is awesome, but I never truly accepted the Utrom thing.

I remember Archie comics back in '94 or was it '95 when they revealed some character designs of a possible redesign of Shredder done by Pat Spaziante(he penciled the Archie Sonic comics back in the 90s). I thought they were cool.

I prefer the Mirage design and the 87 design, if only because they seem a little more practical for a guy who's a ninja.
The 2003 version is wearing armor, which makes for good defence in battle, but not for sneaking around. I'd say the same with the two movie designs as well, though the 1st movie's Shredder more or less resembles his Mirage incarnation. His helmet would be too cumbersome.
I realize that I'm overthinking this, but this is a fan forum... a breeding ground for discussing useless knowledge and opinions.

Mirage Shredder.
It isn't just some "Mirage is better," attitude talking. He's the only one who went for a truly understated look (as little as we saw him). No capes, no full-body armor, no sparkly jumpsuits. Just a man in a dogi with some blades on his arms. He actually looks 1) plausible, and 2) like he could fight.
Least favorite goes to the Nickelodeon version (among the only designs I legitimately dislike from the new show) and the design shared by Ch'rell in 4Kids and Oroku Yoshi in Mirage.
IDW gets runner-up, because, you know, I actually believe he could move in that outfit. And I like the aged look a lot. The movie versions are a little over-the-top, but okay as well. I dig the grated facemask.

The first movie/Mirage Shredder for me. He doesn't have a lot weighing him down. I think the Nick show has way too much going on on his costume. Those blades look like they weigh a ton.

Mirage shredder is just so bad ass. Least favorite would be 2k3. IDW has a beautiful design, but his character is kind of boring in the idw comic.

Though the 2003 Shredder had several suits of armor, his first was the best. I love the abs and the string that comes off of the foot emblem.
His Season 3/"Bad Day" armor was pretty awesome. I did not like his R.A.H. armor, it looked awkard and too light.

I'm kinda of going to go with the IDW design.
His design is a bit like Hattori Hanzo's design in Samurai Shodown...and thats a damn good thing.
On second thought I think I like Mirages the best... simple and sweet.
meh I dunno.

I was originally going to either say the Mirage comics design or the OT design... until I saw the intimidating image of the current IDW design for the Shredder. So, in order from least to most favorite will be as such:
5) Nick's rendition. This is just because Shredhead's armor pieces look too bulky. Not to mention, I hate how big his claws are; they look almost like those impractical "martial arts" hand blade things that some quack weapon manufacturers make these days... yuck.
4) 2003's version. I don't exactly dislike this one, but I can agree with Logan on this one -- not very stealthy. He looks more like an evil samurai than anything else.
3) Mirage's classic. Simple, to the point, but why red of all colors? Maybe it's just the statuette that has him in red ninja garb? IDK. He also looks a bit impoverished for a modern-day supervillian.
2) The OT's costume. For both nostalgia factor and a decent compromise between practicality and style. Still, the purple cape and cloth hanging from his garb's tunic are a bit impractical; they might get caught on something. #thuper
1) IDW's rendition. Definitely looks like he's about to **** someone up, big time. (my first swear here, eee!) I like the darkened-out eyes, the red scarf-thingy and sash, the dark blue (which, allegedly, was a color that real ninja wore their garb in for night stealth missions) as opposed to black and grey or red. Love the clean-looking fighter's tape around his arms, and the fact that he's got his muscled arms showing. In short, a great blend of intimidation factor, cool costume, and modern ninja style.
The Big Bad

In defense of the 2003 armor's non-stealthy aspects, the show never tried to claim that that was a priority for the character--he had subordinates for that. If he was out in the field, it was usually to make loud and unambiguous statements, which are kind of fundamentally non-stealthy things. Not only that, he has a particular interest in not having his clothes shredded or his "skin" cut open, which makes wearing something stronger than cloth sensible.
