Minecraft is not a power or graphics hungry PC application at all. In fact, it's recommended specs (listed below) are met by the average specs of most computers manufactured 7 years ago. Screen capture software also generally does not requre too many resources. Most new $300 laptops should work just fine for your purposes and will have hardware/software in it that is most likely at least double the recommened specs.

If looking to buy used, just keep an eye on the graphics processing power. Most of your new cheaper laptops today will have have built in graphics processors (either on the motherboard or main processor) that will have no problem with this game. But laptops pre 2010, which will meet the main processor and RAM requirements, may struggle a bit with framerate unless they have a dedicated graphics card.

Hope this helps!

Minecraft Recommended Specs
PROCESSOR: Pentium 4 3.0GHz or Athlon XP 2600+
GPU: GeForce 8600 GS or Radeon HD 6320
RAM: 1 GB
HDD Space: 1 GB
OS: Win Xp 32
Direct X: DX 9

This laptop should be more than enough for what you are looking to do. A 3rd gen i5 is a very good processor that will handle much more graphical intense games than Minecraft. Plus this unit has a dedicated graphics chip which is a bonus. You might want to consider a RAM upgrade at some point to 8GB, but for now 4GB is definitely sufficient and again, more than enough to run Minecraft. Acer is considered a "budget" brand computer but I have owned many throughout the years and personally have never had any issues.
