I don't believe a sword can just chop through wood in one stroke, unless the wood were thin or brittle. No axe can cut down a tree in one chop, after all.

Honestly though I never really thought about how their weapons relate to their masculinity. I mean it's not really something I think about.

I studied old norse religion at Stockholm University. Yes, Mjölner is likely a phallic metaphor. Not only is that a funny interpretation, I know for a fact that it's an accepted theory amongst scholars.
